After an overwhelming response in an IG poll I’ve decided to start sharing our favorite recipes here on the blog. Truthfully it makes a lot of sense since being able to get out and review restaurants isn’t the easiest due to the pandemic and it still give you all some drool worthy food action to look forward to around here. I’m so excited to start sharing our meals here with all of you and can’t wait to see you make them in your own kitchens! Well, that’s enough chatting lets get to the food!
Today I’l be sharing a new take on an old classic, nachos! Most of the time you see nachos with everything mixed around and piled up high but were trying something a little different this time that’s also a bit prettier to look at in my opinion. Sheet Pan Rainbow Nachos are sure to be a hit at your next gathering friends!
Sheet Pan Rainbow Nachos
With this recipe we’ve taken a get-together classic and dressed it up a bit by creating a “rainbow” across some deliciously cheesy, meaty tortilla chips. You can use whatever combo of topping you want but try and keep color in mind to create an eye catching platter. We used:
- red onion
- striped holland bell pepper
- black olives
- roma tomato
First you begin like you would making basic beef tacos. Brown and separate your beef in a skillet and follow the directions on your seasoning packet. While your beef is browning be sure to set your oven to 325 degrees so once the base of your nachos is assembled you can pop the sheet into the oven to melt your cheese. Also get to chopping and prepping your toppings to top your nachos with when they come out hot from the oven.
After your beef is ready to go line a baking sheet with aluminum foil/parchment (for easy clean up) with tortilla chips. Then top chips with you beef then cover with cheese. Place tray into the oven and remove when cheesy is melted and bubbly.
Once your tray of nachos is done it’s time to assemble your “rainbow” using all that gorgeous, colorful produce. Do vertical strips of individual toppings across your tray. The color order is totally up to you!
How easy was that friends?! Using simple ingredients and a bit of imagination you’ve created a beautiful tray of nachos sure to please any crowd!
Sheet Pan Rainbow Nachos
- Tortilla Chips
- 1lb Ground Beef
- Taco Seasoning
- Shredded Mexican Blend Cheese
- Small Red Onion (diced)
- 3 Roma Tomatoes (diced)
- 1 Can Sliced Black Olives
- 2 Avocados (diced)
- 1 Bell Pepper (diced)
- 1 Can Golden Corn
- Sour Cream
- Lime (wedges)
Preheat oven to 325 degrees. Take out a baking sheet and line with aluminum foil or parchment paper for easy clean up. Clean and prepare produce and set aside. Brown and season beef in a skillet over medium heat. Once completed begin to assemble your nachos. Start with one layer of tortilla chips, covering your entire lined baking sheet. Top with seasoned beef then sprinkle generously with shredded cheese. Pop into preheated oven until cheese is melted and bubbly (5 to 10 minutes) then removed. Now top prepped tray of nachos with toppings in vertical lines to resemble a rainbow. Serve immediately and garnish to taste.
